Situated along the beautiful C&O Canal in the heart of Georgetown, the newly opened Dyllan’s Raw Bar and Grill offers regional American cuisine centered on a modern raw bar, fresh seafood, and seasonal fare. The raw bar highlights “ornate tins of seafood native to Spain, Portugal, and Mediterranean locales” to satisfy the most sophisticated of palates, along with the obligatory oysters and clams. Favorite entrees include the Poached Halibut with lemon olive oil and saffron and the Avocado Mac & Cheese, a great option for vegetarians.
The restaurant is housed in a circa-1890s warehouse built from locally quarried stone and exposed Virginia “iron wood” heart pine timbers. The interior is modern yet celebrates the building’s industrial past with a wood- and marble-accented bar and dining rooms situated around a large double-sided fireplace. Enjoy your meal a la carte in the comfortable outdoor seating in both the courtyard and along the canal.
